Egg Patties / Egg Puff
Ingredients:
4 Boiled eggs Chopped into cubes
1 Ready rolled puff pastry
1 finely chopped onion
2 tbsp. finely chopped fresh coriander
½ tsp cumin seeds
½ tsp turmeric powder
½ chilli powder
½ tsp black pepper powder
1/4 tsp salt or as per taste
3 tbsp. oil for frying
1 Egg whisked for glazing
Directions :
For the filling
1. Heat 3 tbsp of oil in a frying pan, add chopped onion and fry till light brown. Then add the spices ( ½ tsp cumin seeds, ½ tsp red chilli powder, ½ tsp turmeric powder, ½ tsp black pepper powder, Then add fresh coriander and mix well. Next Add the chopped egg ¼ tsp of salt or as per taste. Last add ½ tbsp. of butter mix and set aside, the filling is ready.
For the patties
1. Remove the puff pastry from the packing and place it on your work board. Using a knife cut the puff pastry roll into 12 rectangular pieces. In the meantime grease the baking tray with ½ tbsp. of butter.
2. Fill the cut pastry pieces with 1 tbsp of the Egg filling.
3. fold the crust over into a square And use fingers to press the edges.
3. Place the pastry's on the greased tray. Use the whisked egg to glaze the top of the patties. Place the tray on the middle rack in the oven. • Bake at 200 degrees or Gas Mark 6 for 25 - 30 mins.
