Egg Salad

Egg salad is a dish made primarily made of chopped hard-boiled eggs and mayonnaise, But this recipe is super nutritious, as it not only includes boiled Eggs but also veggies.
Ingredients
2 medium carrot
2 medium potatoes
1 medium beetroot
1/2 cup of French beans
2 boiled eggs chopped into cubes.
1 tsp lime
¼ tsp pepper
2 tbsp olive oil
2 tbsp mayo
1 finely chopped green chilli ( optional)
Salt to taste
Directions:
1. Boil all vegetables accept beetroot with salt until done. Separately presurecook the beetroot on high flame till 1 whistle or boil untill well cooked and done, then strain all the water off from the veggies. let it cool for about 10 mins then Chop them into small cubes and put it into a mixing bowl.
2.Next In the Vegetable mixing bowl add olive oil, lime, pepper, salt & toss it well, you can also add fine chopped green chilli ( optional).
Then add the mayonnaise & mix well.
3. Next add the chopped boiled eggs & give it a nice toss so that all the egg and veggies are covered with the mayonnaise.
4. You can decorate it with egg slices ( Optional).
Your Nutritious Egg Salad is ready to eat.
I've tried it.. just a perfect starter before meal time.
