Chocolate Banana muffins


Prep time: 5 mins.         Cook time: 15 mins.

Serves: makes 10 muffins

These chocolate banana muffins are delicious and a healthy treat, as its made with oat flour and bananas.

Ingredients:

Wet ingredients 

1& 1/3 cup mashed overripe banana’s 

1 Egg

1 tsp vanilla extract

1 Tbsp milk 

Dry ingredients 

1 cup oat flour

1/4 cup cocoa powder

1 tbsp Sugar

1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

Chocolate chips (optional)


Directions:

1. Blend the wet ingredients in a blender and pour into a mixing bowl.

3. Then add the dry ingredients and mix well. Then add chocolate chips (optional) and give a quick stir.

4. Line a muffin tray with paper cups and pour the batter to fill about 3/4 of the cup.

5. Preheat the oven to 180 C  / Gas mark 4, Bake for about 12-15 minutes or until done.


Recipe Notes:

  • Make sure to use overripe banana’s or the ones with slight black spots...
  • You can skip the sugar if you like, but make sure you use overripe banana’s to get a bit of the sweetness.
