Sweet Corn Chicken Soup

Sweet Corn Chicken soup also known as hicken Clear Soup, is a good appetizer enjoyed by all round the world. It is very easy to make at home with basic ingredients...

Ingredients:

For the chicken broth 

150 grms Chicken breast

1 Onion sliced

3 garlic cloves crushed

1/2 tsp pepper corns

1 veg stock cube 

Salt to taste

5 cups of water


For Sweet Corn Chicken Soup

3/4 cup Corn Kernels

1 Cup Corn kernel puree ( see notes *)

1 Onion finely chopped

3 garlic cloves finely chopped 

3 Spring onions

1 Egg whisked

1 Tbsp olive oil or cooking oil

1 Tbsp cornflour

1 tsp Pepper Powder or to taste 

Salt to taste


Directions:

1. Make chicken Broth by simmering all the ingredients listed below "For Chicken broth " for 25 -30 minutes. Then Filter the broth and remove the pieces of chicken, shred it and set aside to add to the soup.

2. In a cooking pot on low to medium flame add 1 Tbsp of oil, add onions and fry till soft, then add garlic and fry for 30 secs. 

3.  Next add spring onions, corn paste, corn kernels and the shredded chicken and mix well.

4. Add chicken stock and corn flour mixture         ( 1Tbsp cornflour with 2Tbsp of cold water ). Also add salt and pepper for seasoning.

5. Cook for about 8 minutes, then add egg, quickly mix well.. and cook for another 2 - 3 mins.


Recipe Notes:

* In a blender / food processor,  blend/ process the corn kernels with a little water to form a smooth paste.

• You can substitute the broth with ready chicken stock cubes. For 2 cups of boiling water add 1 chicken stock cube.

• You can also use chicken with bones to make the broth. 

• You can also add Celery sticks to the broth for additional flavour.

• I used no msg veg stock cube, you can use according to your preference. Adjust the salt accordingly..

• To get the restaurant style taste... you can add a Tbsp of soya sauce and a dash of sugar.
