Chicken - Vegetable Soup

This classic chicken soup recipe is so easy and simple to make. You can add any of your favourite veggies and also add your own twist to this recipe.

Ingredients

For the Chicken broth/ stock 

300 grms boneless Chicken 
6 Cups water
1 Onion sliced
3 Garlic cloves crushed
2 Celery sticks
½  tsp pepper corns 
Salt to taste 

For the soup
1 Tbsp Olive oil 
1 onion chopped
3 medium carrots chopped 
150 grms French beans chopped 
1 tbsp Celery leaves ( finely chopped)
50 grms noodles crushed 
3 tbsp yogurt
3 Garlic cloves minced
Salt to taste
Pepper to taste

Directions :

1. To prepare the chicken broth put all the Ingredients mentioned for the chicken broth above and boil for about 25- 30 mins. On medium flame. ( see notes).

2. In a heavy bottom pan, heat olive oil, add the garlic, onions and sauté for 2 mins.

3. Next add carrots and French beans, gently fry for 10 mins. On low flame.

4. In the meanwhile shred half the chicken from the broth and make a puree of the other half, by blending it in a blender with some broth.

5. Next add the shredded chicken and broth bring it to a boil, cover, then simmer for 10 mins
.
6. Then Add in the noodles, Celery leaves, salt and pepper to taste, then simmer for another 5 mins, until hot through.

7. Lastly mix in 3 Tbsp of yogurt, and serve hot...



Recipe Notes:

You can use any veggies you like, just make sure they are cooked well, as some take more time to cook while some take less.
You can substitute the broth with ready chicken stock cubes. For 2 cups of boiling water add 1 chicken stock cube. Make sure to cook the chicken well, while boiling the water for the stock.
If you don’t want the soup to be thick, do not add the noodles.
