Goan Recheado Masala

Recheado Masala is spicy and one of the most famous Goan Condiment.It is mostly used as a stuffing for seafood, and can also be used as a marinade for various other dishes.
Ingredients:
To grind the Masala/ Paste
15 Red Kashmiri chillies ( dry)
6 garlic cloves
8 cloves
8 pepper corns
4 Cardamoms
2 cinnamon sticks( 2 inch each )
1 tsp cumin seeds
½ tsp turmeric powder
1 tsp Sugar or as per taste
¼ tsp salt or to taste
A small ball of tamarind
About 2/3 cup /150 ml vinegar
To fry
1 Onion Chopped
1 Tbsp Oil
6 garlic cloves
8 cloves
8 pepper corns
4 Cardamoms
2 cinnamon sticks( 2 inch each )
1 tsp cumin seeds
½ tsp turmeric powder
1 tsp Sugar or as per taste
¼ tsp salt or to taste
A small ball of tamarind
About 2/3 cup /150 ml vinegar
To fry
1 Onion Chopped
1 Tbsp Oil
Directions:
2. In a Grinder/ blender put all the above ingredients along with the fried onion and grind it to form a fine , thick paste.
Store the masala in a airtight glass Jar and refrigerate.
Recipe Notes:
• Adjust the spice, sourness and sweetness according to your taste.
• Do not add water to grind the paste, use only vinegar.
• The Masala Paste should be thick, not runny.
