Caldo Verde ( Spinach Soup)

Caldo Verde is a traditional Portuguese soup. The main ingredients in this soup are potatoes and leafy greens like Kale, collard greens, spinach or ( the goan valchi Bhaji).

Ingredients:

250 grms/2 Potatoes ( Boiled & mashed)
1 Onion finely chopped 
20 spinach leaves 
¼ Cup grated Cheddar cheese ( optional)
4 Cups veg stock
1 Cup milk
2 Garlic cloves (minced )
½ tsp pepper powder 
2 Tbsp olive oil 
1 Veg stock cube
Salt to taste

Directions:

1. Blend the Potatoes with 1 cup of milk and set aside.


2. In a cooking pan, heat Olive and sauté onions  until soft, add garlic and sauté till fragrant.


3. Then add in the veg stock, blended potato, the stock cube and give it a boil. Lastly stir in the spinach, add cheese, pepper & salt to taste. Simmer for 2-5 mins. and its ready to enjoy..


Recipe Notes:

  • You can substitute the milk in the recipe with veg stock instead.
  • For the non veg option, you can add Chouriço, or Spanish chorizo, sliced into 1/4-inch (6-mm) coins, cooked or shallow fried, to enjoy the authentic Portuguese Caldo Verde.
