How to make Coconut milk
Prep time: 10 mins. Serves: makes 3 cups
Home made coconut milk is naturally sweet, creamy and the perfect dairy-free alternative to milk!
Ingredients:
2 cups/ 160 grms Freshly grated coconut ( see notes)
3- 4 cups / 720- 960 ml water
Pinch salt
Directions:
1. In a blender, add coconut, 3 cups water and salt. Top with a lid and cover with a towel to ensure it doesn't splash. Blend for about 2 minutes or until the mixture turns into a fine paste.
2. If the mixture is too thick, add the remaining 1 cup (240 ml) of water and blend for few seconds.
3. Pour the mixture over a large mixing bowl with a sieve or a muslin cloth placed in and squeeze to remove the juice.
4. Transfer the coconut milk into a glass jar, seal with a lid and refrigerate for upto 3 days.
Recipe Notes:
- You can also use ready , frozen fresh grated coconut, just make sure you thaw the coconut at room temperature before use.
- For those who like to drink fresh coconut milk, you can add 1 Tbsp of maple syrup for sweetness, you can add vanilla essence, you can also add dates while blending the milk for additional taste and flavours.
