Date & Walnut Cake

A perfect tea time recipe, filled with Dates and walnuts making it a rich and delicious Cake loaf.
Ingredients
225 grms Pitted/ Seedless Dates (roughly chopped)
85 grms Walnuts (roughly chopped)
225 grms Self Raising Flour
85 grms Butter (softened)
85 grms Caster Sugar
120 ml Boiling Water
1 Free-range Egg (beaten)
1 tsp Bicarbonate of Soda
1 tsp vanilla essence
Directions:
1. In a large mixing bowl, place the dates, bicarbonate of soda, butter and sugar. Pour the boiling water over it and mix well, to melt up the butter. Set aside until the boiling water has cooled.
2. Once the mixture has cooled, add the egg, vanilla essence and walnuts, mix until well combined. Slowly sift in the flour, and mix well to create a batter.
3. Pour the batter into a 2lb loaf tin, lined with greased baking paper and bake in a pre-heated oven for 1 hour 15 minutes at 160C / Gas Mark 3/ 150C for fan assisted ovens.
4. Once baked, leave the cake in the tin for 15 mins., before cooling on a wire tray/ rack. Slice & enjoy freshly baked Dates & walnut cake.
Recipe Notes:
- You can keep the cake in an air-tight container for upto 3 days.
