Jeera Rice

Jeera Rice is a simple flavoured Indian Rice dish, wherein the rice is cooked with some fragrant spices.
Ingredients
1 cup Basmati Rice
2 cups Water + for soaking
2 Tbsp pure ghee or butter
1 Bayleaf
2 inch Cinnamon Stick
4 Cloves
4 Cardamoms
1 star anise ( Optional)
1 mace strand ( optional)
1 tsp Jeera Cumin Seeds
1/2 tsp Salt or to taste
2 Tbsp Fresh Coriander (chopped)
2 green chilies deseeded & finely chopped
( Optional)
Directions
1. Wash the rice 3- 4 times, then soak it in water for 20 mins. ( the water should be much above the rice level) , then drain it completely and set aside.
2. Heat ghee in a pot and add the whole spices and cumin seeds( add green chilies, if using).
3. Once the cumin seeds start spluttering, add the drained rice to the pan and sauté for 1- 2 mins. on a medium flame.
3. Next, add two of cups water and salt to the rice and mix well. Bring the rice to a quick boil, then simmer and cover with a lid. Cook the rice for about 5 -6 minutes, until all the water has evaporated and the rice is cooked through.
4. Fluff the grains of rice with a fork, top with chopped coriander and serve hot.
