Pork Vindalho

Pork Vindalho is a Goan Pork dish , wherein the pork meat is marinated in spices and vinegar and slow cooked. It is has been inspired the Portuguese dish carne de vinha d'alhos ( meat marinated in garlic & wine).
Ingredients
500 grms Pork
1 Onion ( Chopped)
1/2 tsp sugar
1 Tbsp Palm or cashew feni ( optional)
1 Cup water
Salt to taste
Salt to taste
For the Vindalho Masala
10 Kashmiri Chillies,
6 Garlic cloves
1 inch Ginger
½ tsp cumin seeds/ jeera
½ tsp Turmeric/ haldi,
2 inch Cinnamon stick
5 Pepper corns
5 Cloves
100 ml Vinegar or as required
Directions
1. Grind all the ingredients of the vindaloo masala as shown above in a grinder, to make a fine paste.
2. Then, wash the Pork pieces well, and chop them up into nice bite size bits. Apply salt and Vindalho Masala, mix well and set aside.( * see recipe notes).
3. In a pan, heat oil and fry onions till soft and light brown. Add the marinated meat and fry for 2 mins. Next, add 1 cup of water, salt as per taste, close the lid of the pan and cook until the meat is well done.
Last ( you can add 1 Tbsp of palm feni if you like
and cook for another 2 mins.)
Enjoy Pork Vindalho with Rice, Pulao or Bread.
Recipe Notes:
- * You Can Marinate the Meat overnight in the Refrigerator to enhance the taste of the meat.
- Cooked Vindalho always tastes good the next day.
