Classic Vanilla Sponge Cake


Prep time: 10 mins.               Cook time: 35 mins.

A delicious and classic vanilla sponge cake/birthday cake/ special occasion cake recipe. This quick and simple recipe is just perfect to make and decorate, to mark any special occasion.
Ingredients:

225 grms Self raising flour 
225 grms Butter ( softened)
225 grms caster sugar
4 eggs
1 tsp Baking powder 
1 tsp vanilla extract
2 tsp milk

Directions:

1.   Sift together,225 grms self-raising flour and 1 tsp of  baking powder.

2. In a mixing bowl, add 4 eggs, 225g soft butter, 225g caster sugar, 1 tsp of vanilla extract, 2 tsp milk and beat for about 2 mins.

3. Slowly add in the sifted flour and beat well, untill thoroughly mixed into a smooth, and fluffy batter, make sure there are no lumps.

4.  Line 2 , 8" baking trays with greased baking paper, pour the cake batter into the tins.( see notes)

4. Bake for 35 minutes, in a preheated oven at 140C fan / 160C / Gas mark 3. To check if the cake is cooked insert a skewer and if it comes out clean the cake is ready.

5. Leave it to cool in the baking tray for about 30 minutes and then move it on a wire rack to cool completely. 

You can layer the cake with some fresh cream frosting and fruits of your choice and finish along with a sprinkle of powdered sugar on top. 

Or You Can Layer and decorate your cake for a special occasion.

Recipe Notes:

Make sure the cake has been cooled completely before decorating.
You can use 2 x 20cm round sandwich tins or a 20cm x 30cm rectangular tin, depending on the shape of the cake you want to make.
  You can use any butter salted or unsalted as
