Classic Vanilla Sponge Cake
Ingredients:
225 grms Self raising flour
225 grms Butter ( softened)
225 grms caster sugar
4 eggs
1 tsp Baking powder
1 tsp vanilla extract
2 tsp milk
1 tsp vanilla extract
2 tsp milk
Directions:
2. In a mixing bowl, add 4 eggs, 225g soft butter, 225g caster sugar, 1 tsp of vanilla extract, 2 tsp milk and beat for about 2 mins.
3. Slowly add in the sifted flour and beat well, untill thoroughly mixed into a smooth, and fluffy batter, make sure there are no lumps.
4. Line 2 , 8" baking trays with greased baking paper, pour the cake batter into the tins.( see notes)
5. Leave it to cool in the baking tray for about 30 minutes and then move it on a wire rack to cool completely.
You can layer the cake with some fresh cream frosting and fruits of your choice and finish along with a sprinkle of powdered sugar on top.

Recipe Notes:
• Make sure the cake has been cooled completely before decorating.
• You can use 2 x 20cm round sandwich tins or a 20cm x 30cm rectangular tin, depending on the shape of the cake you want to make.
