Doce/ Doce de Grao


Prep time: 20 mins.               Cook time: 50 mins.
Cuisine: Goan        Serves: Makes 1.2 Kg of Doce

Doce de Grao is a sweet & soft lentil fudge that is specially prepared during weddings, Christmas & for special occasions in Goa.

Ingredients 
1 & ½ Cup/ 300 grms Chana Dal 
3 cups sugar
3 cups grated coconut 
2 tsp clarified butter/ Ghee
1 tsp cardamom powder


Directions:

1. Soak the chana Dal for 3-4 hrs, then Boil in a pressure cooker with 2 cups of water for 2 whistles. Alternatively (see notes)

2. Grind the slightly cooled Chana dal into a fine paste in batches and set aside.

3. Grind the grated Coconut with about 1 cup of water into a fine paste.

4. In a heavy bottom vessel, Mix the ground coconut, sugar and chana dal well.


5. Keeping the flame on low, stir continuously with a spatula or a flat wooden spoon  (be careful of splatters) . After about 30-35 mins., when the mixture thickens, add the ghee and cardamom powder.

6. Continue stirring until,  the mixture starts leaving the sides of the pan and forms a ball.

7. Grease a baking tin or a kitchen platform and roll the mixture out while still hot. You can also make a design using a fork. 

8.    Cool the dose for about 1hr & cut into diamond shaped pieces or into shapes of your choice...



Recipe Notes:

You can skip soaking the chana dal, but you will need to pressure cook it for more time.. till the chana dal turns soft. I would recommend soaking it..
You can use any shape you want to cut the dose, you can also shape the dose in a round platter aswell.
