Mango Coconut Cake


Prep time:15 mins.               Cook time: 30 mins.

Ingredients

1/2 cup mango puree
125 grms butter (softened)
3/4 cup caster sugar
1 cup desiccated coconut
1 & 1/4 cups self-raising flour
2 eggs
½ tsp vanilla essence 


Directions:

1. In a mixing bowl, beat together butter, essence and sugar with until all the sugar is dissolved and well combined.

2. Add eggs one at a time, beating until just combined between additions.

3. Lastly add in the mango puree, coconut and flour, and mix well. 

4. Pour the batter in a 20 cm Tin lined with greased baking  paper.

5. Bake at 200C/ Gas mark 4 for about 30- 35 minutes. Or until a toothpick comes out clean.
Let it Stand in the tin for 10 mins. before turning onto a wire rack to cool.

 
6. Top with Mango Mousse & Serve or Enjoy plain Mango coconut cake.
