Goan Sausage Pulao

Goan sausage Pulao is made with the famous Goan Choris, it's one of my all time favourites.
This pulao recipe is great to cook on a Sunday, specially when you would like to spend less time in the kitchen and enjoy the weekend eating something delicious.

Ingredients

2 Cups Rice (preferably Basmati)
30 Goan sausage beads 
2 Onions (chopped)
2 tomatoes (chopped)
4 cups water ( double the quantity of rice)
2 Tbsp fresh Coriander/ Cilantro ( chopped)
1 Stock cube powder 
1 tsp turmeric
1/2 tsp shahi Jeera
2 bay leaves
5 cardamom/ Elaichi 
6 peppercorns
6  cloves
2  Cinnamon sticks 2 inch each 
1-2 Tbsp cooking oil
salt to taste

Directions 

1. With the help of a scissor, cut the skin covering of the sausages, remove the meat and set aside. ( See notes* )

2. Wash the rice in cold water 2- 3 times and set aside.

3. In a cooking pot add 2 Tbsp of oil, add the spices i.e. jeera, bay leaves, Cardamom, pepper corns, cloves  and cinnamon sticks, let it crackle and splutter.

4. Then add the chopped onion and sauté till the onion is translucent , next add the tomato  and sauté till soft.

5. Then add the sausages and  cook on low flame till the sausages release its fat and you get a nice aroma of the sausages.

6. Next add rice to the mix and sauté for a min.

7. Lastly add 4 cups of water, turmeric powder,  stock cube powder, fresh Coriander and salt as per taste and mix well.

8. Let the rice come to boil then, Cover and cook for about 10 mins. Or until all the water evaporates, on low to medium flame. Once done, keep covered for another 10 mins.

9. Gently toss the sausage pulao with the help of a fork making sure not to break the rice. Garnish with some fresh Coriander and Serve hot.

Recipe Notes:
  • * You can also cook the sausages with the skin on, just remove the thread, keep the skin on and cook following the steps above.
  • You can add more Sausages, as per your taste and preference.
  • You can also substitute the Goan sausages for the Spanish Sausages/ Chorizo.
