Chicken Schnitzel

Weiner Schnitzel is a traditional Austrian dish, made with meat ( Pork / beef / Chicken), pounded thin and coated in flour, egg , crumbs & fried until Golden brown & Crisp.

Ingredients 
500 grms chicken breasts boneless
1/2  tsp salt or to taste
1/4  tsp black pepper or to taste
2 Tbsp mustard paste
1 cup Breadcrumbs or as required
1/2 cup flour 
2 eggs  ( whisked)
oil or unsalted butter for frying

Directions 
1. Slice the chicken breast into small fillets, marinade with mustard paste, salt & pepper.

2. Place the marinated chicken fillets in a zip lock bag or between 2 sheets of plastic wrap,  use a meat mallet to pound the fillets gently to get an even thickness, don’t tear the meat.

3. Dip the fillets in the flour, then into the whisked egg, then dredge them with bread crumbs.

4. Shallow fry the Schnitzels on medium flame, for  about 3 mins. on each side or until golden brown & done.

Serve the Schnitzels with, chips, mustard or lemon wedges.
