Goan Sausage Bread/ Chouriço Pao

The Goan Sausage Bread/ Chouriço Pao, is very famous in Goa.  It's just one of those things that  you can't miss on, when your in Goa.

Ingredients 

For the Stuffing 
  • 1 Onion (Chopped )
  • 1 Cup Goan sausages ( remove casing)
  • 1 tsp tomato ketchup 
  • 1 tsp oil 
  • Salt o taste
For the Dough
  • 2 cup All-Purpose Flour
  • 7 grms dry Yeast sachet
  • 1 Tbsp sugar
  • 4 Tbsp Butter
  • 1 Egg
  • 1 tsp Salt
  • Milk (Luke warm, as required ) (see Recipe Note 2. the)
For Glazing 
  • 1 Egg (whisked )
  • 1 Tbsp Butter 
  • 1 Tbsp Sesame seeds ( optional)

Directions 

1. In a skillet heat oil , add the sausages and Onion. Fry on low to medium heat until the sausages release fat and are cooked, lastly add ketchup, salt to taste mix & set aside.

2.  In a bowl, put yeast, add 1Tbsp of sugar, 1/4 cup warm milk and leave it aside to ferment for 15 mins. 

3. In a mixing bowl, put flour, add butter, egg, salt, yeast mixture along with luke warm milk as required to form a sticky dough.

3. Place the dough in a bowl greased with oil, cover it with cloth , cling wrap the bowl and keep it aside in a warm place for at least 1 hour to  ferment. ( preferably Oven)

4. After an hour, the dough doubles in size.

5. Place the dough on a flat surface and punch the dough lightly to remove air from it.
Divide the dough into 8 parts and form balls.

 6. Flatten each ball using your hands and stuff enough of the sausage chilly fry in it.

7. Bring together the edges upwards & seal it to form a ball.

8. Take a baking tray, grease & dust flour on it or line it with greased baking paper,  Place the bread Rolls on the tray keeping the sealed side on the tray & set aside in the oven for 1hr.

9. After 1 hour the bread will increase in size, brush the top of the breads with egg and sprinkle some sesame seeds. 

10. Bake for about 10 mins. In a Preheat oven at 425 deg F (225 deg C). till top of bread turns nice and brown.

Lastly brush the baked bread with butter & serve delicious homemade Goan sausage bread.

Recipe Notes:

1. Don’t use hot milk in the yeast or while kneading the dough, as hot temperature will kill the yeast.
