Potato Bhaji


Prep time: 5 mins.         Cook time: 25 mins.

This Potato Bhaji is also called the Goan Potato patal Bhaji. It is so easy to make and with basic ingredients already available in your kitchen. It's one of my favourites.

Ingredients:

6 Medium size potatoes 
2 green chillies finely chopped 
3-4 Garlic cloves finely chopped 
1 tsp mustard seeds
1 tsp Cumin seeds
1 tsp garam masala
1 tsp turmeric 
3 tbsp fresh coriander finely chopped 
10-12 curry leaves 
2 Tbsp oil
Salt to taste
Dash of sugar 

Directions:

1.Wash, peel and cut the Potatoes into very small dices.

2. Immediately in a cooking vessel, heat oil then add the chopped garlic, green chillies, curry leaves, cumin seeds, mustard seeds and let it splatter for a minute.

3. Then add in the potatoes, add 2 cups of water or until the potatoes are covered. Add turmeric, garam masala, salt to taste and a dash of sugar.

4. Cook with lid closed on medium flame for about 15- 20 mins or until the potatoes are soft and cooked well. Lastly add fresh coriander and cook for a min.

Recipe Notes:

  •  You can also add 1 veg stock cube non msg, while cooking for additional flavour.
  • If your not cooking the potatoes immediately, soak them in water with a tsp of salt , to keep it from turning brown.
