Potato Bebinca

Potato bebinca is a different, but an easier version of the Original Goan Bebinca, but unlike the Original Goan Bebinca, this one is very quick to make and as the name suggests, it is made from Potatoes.
Ingredients:
400 grms Potatoes (Boiled & Peeled )
400 ml Coconut milk ( click link below)
4 Eggs
100 grms all purpose flour/ Maida
350 grms sugar ( powdered )
½ tsp nutmeg powder
3 Tbsp clarified butter/ Pure ghee
¼ tsp salt

Directions
1. Mash the boiled potatoes well and set aside.
3. In the meanwhile, whisk the eggs along with sugar, salt and nutmeg powder. Then add in the blended potato, and mix well.
5. Grease the baking tray with 1 Tbsp of Clarified butter/ ghee, pour in the batter, and bake in a preheated oven at 160C/ Gas mark 3 for 50 – 60 mins, or until done.
6. The batter will rise above the tray while baking. Insert skewer after 45 mins. to check if done, bake until it almost comes out clean.
- To check if the bebinca is ready, insert a skewer, if it comes out clean its ready, since its potato bebinca the Skewer will be a bit sticky.
- The bebinca should not be wobbly, in the middle, if it is , lower the temperature and bake for some more time untill well done.
- While baking the bebinca, it will rise high. Don't worry it will settle down, when it is left for cooling in the tray.
- You can also use Cardamom powder instead of nutmeg powder.
