Goan Pork Stew

Serves: 6 - 8

This Goan Pork stew is filled with meat and vegetables, making it a very hearty meal... It can be enjoyed with Bread.

Ingredients:

500 grms Pork ( skin off, boneless with fat)
500 grms beef  ( boneless )
2 Onion ( chopped)
1 Tomato ( Chopped)
8 Pepper corns 
6  cloves
2 inch Cinnamon stick
1 stock cube
2 potatoes large ( cut into cubes)
2 Carrots large ( cut into cubes)
1 cup green peas
1 Cup macaroni or pasta
1 cup water
3 Tbsp Oil
1 Tbsp butter 
Salt to taste

For the marinade:
8 garlic cloves
1 inch ginger piece 
2 green chilies 
2 inch cinnamon stick
8 pepper corns
4 cloves
½ tsp turmeric powder 

Directions:
1. Grind all the ingredients mentioned above for the marinade into a fine paste.

2. Wash and Cut the pork and beef into cubes, apply the marinade, salt & refrigerate for min. 1 hr.

3. In a wide bottomed pressure cooker, add oil along with onions and sauté till the onions are soft and translucent. Then add in the cloves, pepper corns, cinnamon and tomatoes, sauté till the tomatoes are soft.


4.  Next add the meat along with 1 cup of water and pressure cook for 6- 8 whistles. Let the cooker cool a bit then release the steam.

4. Next add Potatoes, carrots and stock cube cover with a flat lid on, until potatoes are ¾ cooked. 

5. Then add the peas and cook for a few mins.
Lastly add macaroni,  butter and salt as per taste, cook for 2 mins. Leave the stew closed for 10 - 15  mins. the stew is ready to enjoy...




Recipe Notes:
  • You can substitute the pork and beef with boneless chicken, follow the same steps accept pressure cooking the meat.
  • For a creamy gravy texture ,you can add 1 cup of fresh cream while adding the macaroni.
