The natural sweetness and beautiful colour of carrots make them the star ingredient in this easy carrot cake recipe. This homemade carrot cake is crowned with an irresistibly sweet-and-tangy cream cheese frosting.
Ingredients
For the Carrot Cake
1 & ½ cups granulated Sugar
1cup vegetable oil
3 eggs
2 All-Purpose Flour
1 tsp cinnamon powder
1 tsp baking soda
1 tsp vanilla extract
½ tsp salt
3 cups shredded carrots (5 medium)
1 cup coarsely chopped cashewnuts or walnuts
1 & ½ cups granulated Sugar
1cup vegetable oil
3 eggs
2 All-Purpose Flour
1 tsp cinnamon powder
1 tsp baking soda
1 tsp vanilla extract
½ tsp salt
3 cups shredded carrots (5 medium)
1 cup coarsely chopped cashewnuts or walnuts
For the Cream Cheese Frosting
200 grms cream cheese (softened)
¼ cup butter or margarine ( softened)
2 to 3 tsp milk
1 tsp vanilla extract
2 cups powdered sugar
½ tsp Nutmeg to sprinkle ( optional)
Directions:
For the Carrot Cake
1. In large bowl, beat granulated sugar, oil and eggs with electric mixer on low speed for about 1 min. or until blended.
2. Add flour, cinnamon, baking soda, vanilla extract and salt; beat on low speed for 1-2 min.
3. Stir in carrots and nuts. With the help of a rubber spatula.
For the Cream Cheese Frosting
1. In medium bowl, beat cream cheese, butter, milk and vanilla with electric mixer on low speed until smooth.
2. Gradually beat in powdered sugar, 1 cup at a time, on low speed until smooth and spreadable.
3. Frost 13x9-inch cake or fill and frost round layers with frosting. Sprinkle nutmeg on frosted cake, if desired. Store the cake in the refrigerator.
