Chicken Cafreal / Galinha Cafreal

Goan Chicken Cafreal also known as Galinha Cafreal is a famous Portuguese influenced dish in the Goan Cuisine.

Ingredients 
1 kg Chicken ie. 8 Chicken thighs, 8 chicken drumsticks or 4 whole Chicken Legs
Cafreal Masala 
1 Tbsp ginger garlic paste
I Tbsp lime
1 tsp salt or as per taste
Pinch of sugar.
2 Tbsp oil
1 Tbsp butter
½ tsp bullion cube ( optional)

Directions

1. Wash, drain and Pat dry the Chicken, make two slits/ gashes on the Chicken thighs. Rub it well with salt, 1Tbsp ginger garlic paste and 1Tbsp of lime juice and set aside for 15 minutes.

2. In the meanwhile prepare the Cafreal Masala, apply the marinade to the Chicken, rub well even into the slits. Leave aside to marinate for at least 2 hours or overnight in the refrigerator. (overnight is the best)

3.Heat Oil in a pan and add the marinated chicken in it. Cover the pan and cook for 12 minutes on low flame. Then turn the chicken in the pan over, cover and continue cooking for another 12 minutes or until cooked and well done.

4.Remove the lid off the pan, add 1 Tbsp of Butter, a pinch of Sugar, salt as per taste and cook on medium heat till the gravy dries up, the gravy should be thick and coat the cooked chicken well. (* see notes)

Serve the chicken cafreal with some nice caramelised onions rings and  Potato Chips. 





Recipe Notes:

  • Marinating the  Chicken overnight enhances the taste.
  • You can add ½ tsp stock powder for additional taste, while adding the butter and adjust the salt accordingly.
  • *You can also add a bit of water , if you want the chicken with a bit of gravy.
