Dodol

Dodol' is a very famous Goan Sweet that is prepared during the Christmas season. It is a soft and smooth, toffee kind of a sweet that just melts in your mouth. It is also popular sweet in Indonesia, and other Asian countries where it is called mont kalama.

Ingredients 
100 grms Rice flour 
400 grms Goan Palm jaggery
800 ml / 3 & ½ cups coconut milk
150 grms cashewnuts (roughly chopped)
1 tsp Cardamom powder 
1 Tbsp Clarified butter/ Pure Ghee
¼ tsp Salt or to taste 

Directions 

1. In a bowl, add 2 cups water and stir in the rice flour till it forms a paste.

2. In a pan, add about 2 cups water and bring it to a boil. Lower the flame, add the Cut jaggery pieces and keep stirring till all the Jaggery is dissolved. 

3. In a Heavy bottom, non stick vessel, add coconut milk, then strain in the Jaggery mixture and bring it to a boil.

4. Next, add the rice flour and keep on stirring with a wooden or silicon spatula, on a low to medium flame, till it thickens. ( becareful of  splatters while stirring)

5.     When it changes to a darker color, add cashewsnuts, Cardamom powder,  pure ghee and salt to taste.

5. Keep stirring till it starts leaving the sides of vessel and turns into a thick mixture.

6. Pour the dodol mixture into a greased plate,  tray or an aluminum foil container, allow it cool and set overnight.

Recipe Notes:

Instead of fresh coconut milk you can also use, 2 cans of Coconut Milk (400 ml each)
