Goan Beef Roast / Assado
Goan Beef Roast also known as Carne Assada in Portuguese is a traditional Goan beef dish.
Ingredients
• 1 Kg boneless Beef ( cut into 4 - 5 Chunks)
• 1 large Onion (Sliced)
• 4 Dry Kashmiri chilies
• 4 cardamom
• 3 Tbsp Oil
• 1 Stock cube
• Salt (as per taste )
For the Roast Masala
• 10 -12 Black Peppercorns
• 1 tsp Cumin seeds
• 10 Cloves
• 3 inch Cinnamon stick
• 1 tsp turmeric powder
• 1 & ½ inch Ginger Piece
• 10 Garlic cloves
• 1 large Onion (roughly chopped )
• ¼ cup Vinegar or as required
Directions
2. Wash the meat, pat dry, then apply salt and Roast Masala. Prick the meat with a fork, cover and set aside for at least 3 hours or overnight in the refrigerator.
3. In a vessel, heat the oil, place the meat chunks and sear them on med - high flame, until brown on all sides, reserve the marinade.
4. Next , add in the reserved marinade along with, 1 & 1/2 cup of water, sliced onion, kashmiri chilies , cardamom, stock cube and adjust the salt as per taste.
5. Cover and cook on low to medium heat for about 25 mins., turn the meat pieces in between, while cooking.
6. Remove the meat pieces, slice it and put it back into the gravy. Cover and cook on low to medium flame until the meat is tender.
Recipe Notes:
- The cooking time of the Roast will vary, depending on the type of meat your using, if the meat is hard it will take longer to cook.
- You can also cook the meat chucks whole first & lastly cut into slices and add into the thickened gravy.
